Our Favorite Chocolate Chip Cookies

We can hardly make any other cookie we all love this one so much. In fact, this was the "Christmas cookie" we made this year, because we all just love it so much more than the usual sugar cookie that Christmas calls for. I wouldn't consider myself a real sweet tooth, but I cannot stay away from the cookie jar when these are in there.

Hands down, zero question, my favorite cookie of all time.

Ingredients:

  • 2 sticks of butter

  • 1 c. sugar

  • 1 c. brown sugar

  • 2 eggs

  • 1stp. vanilla

  • 2 C. flour

  • 2 1/2 C. oatmeal powder (quick oats in food processor)

  • 1 tsp. baking soda

  • 1 tsp. baking powder

  • 1/2 tsp. salt

  • 12 oz (1 bag) chocolate chips

  • 3 (1.55 oz.) Hershey's Milk Chocolate Bars ground in food processor (optional, but delicious)

Directions:

Melt butter in the microwave. Mix with sugar, eggs and vanilla. In a separate bowl, mix together dry ingredients. Add to butter mixture and mix well. Add chocolate chips and Hershey bars if you are using them. Mix completely. Put 1 heaping teaspoon of dough (rolled into a ball) on an ungreased cookie sheet covered in parchment paper. Repeat, leaving 2 inches apart for each. Bake at 350 degrees in a preheated oven for 9 minutes (we like them best just a little bit undercooked), then let them cool. Remove and place on cooling rack. Enjoy!

Note: the oatmeal powder really gives these cookies incredible flavor! I just toss the 2 1/2 C. of oats right into my Blendtec and give it a few pulses. Definitely worth the extra step and effort.

Tip: I dump everything right into my Kitchen Aid, so that is the only bowl I dirty, in the order of the listed ingredients while it is running. I've never been a "mix the dry ingredients in a separate bowl" kind of gal. :)

This recipe is adapted from one of our favorite books Cookies, Bite-Size Life Lessons by Amy Krouse Rosenthal. She has a whole cookie series, and this makes a great gift and activity to do with your kiddo or grandchild. Read the book and make the cookies, or better yet, read the book while you EAT the cookies. :)
