Our cocktail herb gardens are looking beautiful! But I must say, I have more lavender than I know what to do with. I recently made some lavender simple syrup (it's SO easy!) and have since been playing with different summer cocktail recipes to go along with it.

Lavender simple syrup adds a beautiful floral note to cocktails, and pairs wonderfully with vodka and gin. And because vodka has very little taste, you can easily make these cocktails into mocktails without taking any of the summery flavor away.

Below you'll find my recipe for Lavender Simple Syrup as well as some elegant and refreshing vodka + lavender simple syrup cocktail recipes. Enjoy, and happy sipping!

Lavender Simple Syrup

  • 10-12 sprigs of fresh lavender in a bunch

  • 1 cup water

  • 1 cup sugar (can substitute honey)

Add water and sugar (honey) to small pan, mix well and heat until well combined. Remove from heat, then "stir" the mixture with the sprigs of lavender for a few minutes. Let the sprigs rest in the simple syrup while it cools completely. Once cooled, transfer to a storage container (I like this one from Amazon) and leave a sprig or two of lavender in the syrup.
